Chicken Caldereta

CHICKEN CALDERETA


INGREDIENTS


·         600g chicken thighs or any chicken parts of your choice
·         1 tbsp garlic, minced
·         1 large onion, chopped
·         1 large carrot, sliced
·         2 pcs medium size red and green bell pepper, sliced
·         1 medium size potato, diced
·         1 can green peas
·         250g tomato sauce
·         1 cup pineapple juice
·         2 tbsp soy sauce
·         1 can liver spread
·         1 pc chicken cube (optional)
·         ½ water
·         Cooking oil
·         Salt and ground black pepper to taste


INSTRUCTIONS


1.       In a hot skillet, saute garlic and onions
2.       Then add the chicken pieces, cook this for 5 minutes
3.       Turn the chicken pieces and cook this for another 5 minutes
4.       Add the soy sauce, pineapple juice, tomato sauce, carrots and potatoes, then mix
5.       Add ½ cup water
6.       Cover and simmer for about 20 minutes
7.       After 20 minutes, add the red and green bell peppers, green peas, liver spread and chicken cube
8.       Sprinkle with salt and ground black pepper according to your taste
9.       Cook this for another 5 minutes
10.   Serve hot and enjoy!
