INGREDIENTS

500g chicken
·
4 cloves garlic, minced
·
2 pcs dried bay leaf, teared
·
1 pc star anise
·
1 tsp whole black pepper
·
1 cup mango juice
·
Half of mango fruit
·
2 tbsp olive oil
·
¼ cup apple cider vinegar
·
1/8 cup soy sauce
·
Salt to taste
PROCEDURE
1.
Place the chicken in a pot, add-in the vinegar, soy sauce, ½ cup
of mango juice, garlic, bay leaves, star anise, salt and black pepper.
2.
Mix and bring to boil. Lower the heat, cover the pot and let
the chicken cook for 20 minutes.
3.
After 20 minutes, separate the chicken from the sauce.
4.
On a separate pan, fry the chicken in olive oil until it
turns brown.
5.
Add remaining ½ cup of mango juice to the sauce.
6.
Put in sliced mango fruits.
7.
Season with salt and ground black pepper according to your
taste.
8.
Mix and simmer for at least 3 to 5 minutes.
9.
Place the chicken on a bowl and pour some mango sauce.
Serve with steamed rice and
